Olive Ovation is owned and operated by Alicia Shroff and Vijay Shroff, both Certified Olive Oil Sommeliers dedicated to sourcing and sharing some of the finest olive oils in the world. With a deep appreciation for quality, freshness, and craftsmanship, they focus on selecting oils that reflect the highest standards of extra virgin olive oil production.
They are particularly passionate about high polyphenol extra virgin olive oil and its potential health benefits, and believe that consumers should understand what makes an olive oil truly exceptional. Through careful curation and ongoing education, they aim to bring greater clarity to topics such as flavor, harvest timing, production methods, and the rich history behind olive oil.
Our Standards
Every olive oil we offer is selected through a rigorous evaluation process grounded in both scientific analysis and sensory assessment. We carefully review producer-provided lab data, with particular attention to polyphenol content, acidity, and other key quality markers that define exceptional extra virgin olive oil.
We verify these metrics using our own lab-grade spectrophotometer to assess polyphenol levels independently. This added layer of validation ensures consistency, accuracy, and transparency in the oils we select.
Equally important is taste. As Certified Olive Oil Sommeliers, we apply International Olive Oil Council (IOOC) sensory standards to evaluate each oil for balance, complexity, and the absence of defects. Only oils that meet both our analytical and sensory criteria are included—ensuring they deliver not just measurable quality, but a true expression of freshness, flavor, and craftsmanship.
Our Focus: High Polyphenol Olive Oil
We focus on high-polyphenol extra virgin olive oil—oils that are rich in naturally occurring antioxidant compounds known for both their sensory intensity and potential health benefits. These oils are typically produced from early-harvest olives and are characterized by vibrant bitterness and a distinctive peppery finish, indicators of freshness and high phenolic content.
We prioritize producers who emphasize early harvesting, careful milling, and proper storage to preserve these compounds from grove to bottle. In addition to our curated selection of extra virgin olive oils, we offer a thoughtfully chosen range of gourmet foods that complement and elevate the experience. Our collection includes traditional balsamic vinegars produced using time-honored methods, as well as high-quality flavored wine vinegars crafted for balance and versatility.
We also feature Agrumato Flavored Oils—produced through the co-milling of fresh ingredients such as citrus, herbs, or peppers with olives at the time of extraction. This method creates naturally integrated flavors without the use of infusions or additives.
