The Olive Ovation Polyphenol Standards

Polyphenol numbers alone can be difficult to interpret. To make them practical and meaningful, we developed a clear, structured classification system—unique to Olive Ovation—that translates lab data into real-world guidance for both flavor and function.
Each oil we carry is categorized based on polyphenol levels verified by our rigorous methodology, not estimates or marketing claims:
Everyday (Less than 250 mg/kg)
These oils are mild, approachable, and lower in polyphenols. They offer classic olive oil flavor with minimal bitterness and pungency. While they fall below the EU threshold for specific polyphenol-related health claims, they are still heart-healthy fats and an excellent substitute for butter or other less favorable oils. Importantly, they remain a premium product, as all true extra virgin olive oil meets higher standards of quality, freshness, and production by definition.
Elevated (250–500 mg/kg)
This category marks the entry point into true high-quality EVOO. Oils at this level meet the EU standard for polyphenol-related health claims. Expect balanced bitterness, a light peppery finish, and increased antioxidant presence.
High (500–1000 mg/kg)
These oils deliver both intensity and function. Bitterness and pungency become more pronounced, reflecting significantly higher concentrations of beneficial compounds. This range represents the optimal balance for daily consumption—strong enough to deliver meaningful benefits while remaining versatile in use.
Ultra-High (Above 1000 mg/kg)
At this level, oils reach exceptional concentration. Typically early harvest and carefully produced, these oils are bold, structured, and highly expressive. The pungency can be intense, and the antioxidant concentration is at its peak. These are often used as finishing oils or consumed in small daily amounts.
