Produced by the Rondolino family on the historic Tenuta Colombara estate in Vercelli, Italy, this exceptional Carnaroli rice is aged for a minimum of one year — and up to seven — to achieve unparalleled texture, flavor, and performance.

The aging process stabilizes the starch within the grain, making it less soluble and allowing the rice to maintain its structure while releasing just the right amount of creaminess. The result is risotto with distinct, firm grains suspended in a luxuriously velvety sauce.

Acquerello is refined using a patented “helix” method, in which the grains gently rub against each other to remove the husk while keeping each kernel intact. After refining, the rice is uniquely re-enriched with its own germ, restoring nutrients and deepening its flavor profile.
