In Tunisia, this treasured staple is known as M’hamsa, meaning “sun-dried wheat grains.” Made from North African semolina crafted from crushed durum wheat, M’hamsa is produced according to traditional Berber methods that have been preserved for generations.
The process begins by blending semolina with olive oil, water, and sea salt. The mixture is then carefully pushed through screens to form small, hand-rolled grains. These grains are spread out and left to dry naturally under the sun, where olive oil and sunlight work together to preserve and enhance their texture and flavor.
Making couscous by hand is a time-honored tradition, historically passed from mother to daughter. In years past, women would gather for days at a time to prepare large batches together — a ritual that celebrated both community and craft. While these gatherings are less common today, the spirit of the tradition lives on in every batch.
As with all Mahjoub products, this M’hamsa is produced using traditional farming methods, with no additives or artificial processing. It is certified organic.
