Rich, nutty, and beautifully complex, Banyuls Vinegar brings depth and character to everyday cooking. Crafted from the region’s Grenache noir (about 50%), Grenache gris (about 40%) and Carignane (about 10%) grapes in Banyuls-sur-Mer on the Mediterranean coast of southern France, it is aged 4–6 years in oak barrels, developing subtle sweetness, gentle bitterness, and a warm vanilla aroma.

Its layered flavor shines when deglazing a pan, intensifying as it reduces into a rich, flavorful sauce. Splash over sautéed mushrooms, pair with chicken, pork, or duck, or whisk with extra virgin olive oil for an elegant vinaigrette. A finishing drizzle adds dimension to roasted vegetables and hearty salads.

The name honors Abbot François Rous, a 19th-century priest and champion of Roussillon’s wines who traded wine to help fund the village church.

Founded in 1952, Terres des Templiers—“Land of the Knights Templar”—is the region’s largest producer of Banyuls AOC wine. The cooperative brings together roughly 750 small-scale growers, or vignerons, who tend steep, terraced vineyards on schist soils along the Mediterranean coast at the foot of the Pyrenees.
