2025–2026 Harvest
This Extra Virgin Olive Oil is produced from Arbequina olives grown in the Los Alcores region of Carmona and harvested at their optimal stage of ripeness, known as envero — when the fruit begins to turn from green to purple.
To achieve its exceptional quality, 8–9 kilos of olives were required to produce a single liter of oil (5 kilos would be typical), ensuring greater concentration, balance, and flavor integrity.
2025–2026 Harvest Notes
The 2025 season proved challenging, marked by intense summer conditions and an unusually dry, warm autumn during harvest. Despite these difficulties, the result is a beautifully expressive and balanced oil.

Aroma:
Fresh green fruit leads the bouquet, with pronounced notes of banana and green apple. Subtle hints of fresh grass and garden vegetables, particularly tomato, unfold into a delicate nutty finish.
Palate:
A pleasantly sweet entry gives way to light bitterness and a lingering medium peppery note. The fruit character deepens on the palate, balancing green and slightly ripe fruit impressions, with faint touches of kiwi adding brightness.
Overall:
Complex, elegant, and harmonious.
Pairings
Ideal for seafood salads, chilled soups such as salmorejo, creamy vegetable soups, delicate sauces, foie gras, and homemade mayonnaise. Its smooth, approachable character also makes it an excellent olive oil for children.
