2025–2026 Harvest Notes

The 2025 season was challenging, marked by an intense summer and an unusually dry, warm autumn. Although the trees carried a heavier fruit load, the olives themselves were less developed, with a lower pulp-to-pit ratio. Despite these conditions, the result is a beautifully expressive and complex oil.

Extra Virgin Olive Oil, green with a light-to-medium intensity fruitiness.

Aroma:
Fresh green fruit dominates, with herbaceous notes of freshly cut grass. Hints of banana and green apple emerge, followed by subtle impressions of fruit purée and a delicate nutty finish.

Palate:
A gently sweet entry gives way to balanced bitterness and a medium-to-high peppery finish that lingers pleasantly across the palate. The oil leaves the mouth feeling fresh, with layered notes of green vegetables such as tomato and a final touch of green almond.

Overall:
Complex, vibrant, and beautifully structured.
