This Extra Virgin Olive Oil is a carefully crafted blend of Manzanilla and Arbequina olives grown in our groves at Pago Cerros Blancos in Carmona and Finca La Merced in Alcalá de Guadaíra.
This special bottle is dedicated to our grandfather, Antonio Ruiz, pictured at dawn overlooking his groves — imagining the day he would see the fruit of his labor captured and enjoyed from a bottle. It is a tribute to heritage, patience, and devotion to the land.
2025–2026 Harvest Notes
A challenging year for producing exceptional oils, yet the fruit developed beautifully thanks to the character of the groves and soil. The olives reached an excellent size with a strong pulp-to-pit ratio and arrived at the mill healthy and vibrantly green — ideal for crafting an expressive oil.
Tasting Profile
Type:
Extra Virgin Olive Oil with intense green fruitiness.
Aroma:
Dominated by green fruit, with subtle herbaceous undertones. Prominent notes of garden vegetables — especially tomato vine and artichoke — lead the bouquet, supported by delicate hints of apple and banana.
Palate:
A sweet initial entry quickly develops into a pronounced bitterness and medium spice, with bitterness taking the lead. Distinct notes of olive leaf and fresh vegetables — particularly artichoke — carry through, finishing with aromatic herbs, green Manzanilla olive, almond, and mixed nuts. Light astringency adds structure and depth.
Overall:
Complex, structured, and deeply Mediterranean, with memorable notes of artichoke, olive leaf, and fresh herbs.
