Type of Olive: Salonenque, Aglandau, Grossane, Verdale

Extraction: Cold Pressed

CastelaS revisits the age-old traditions of Provence to create the Noir d’Olive AOP olive oil. Produced from four fruity olive varieties (Salonenque, Aglandau, Grossane and Verdale) native to their own groves, they hand-pick the olives only when fully ripe. The olives are stored in containers without oxygen for three days to ignite the fermentation process.

The oil has a sweet bouquet and mild flavor with black olive tapenade and truffle notes on the palate.

Serve it at room temperature in garlic-seasoned salads, use to make mayonnaise or drizzle on toasted baguettes, mushrooms or mashed potatoes. If you like black olive tapenade, you’ll love this olive oil.

Frequently Asked Questions

What is virgin olive oil?

Virgin olive oil is unrefined and mechanically extracted but allows for slightly higher acidity (up to 2%) and minor sensory flaws.

Noir d’Olive AOP is made in Provence using four local olive varieties—Salonenque, Aglandau, Grossane, and Verdale—that are fermented (the sensory flaw referenced above) that gives the finished oil its distinctive ripe, mellow flavor profile.

Why is this style of olive oil from Provence?

Noir d’Olive reflects an age-old Provençal style of olive oil production. CastelaS allows fully ripe olives to rest for three days in oxygen-free containers before pressing, encouraging a controlled fermentation process that develops the characteristic flavors associated with this traditional style.

The result is very different from the fresh, grassy or peppery character often associated with early-harvest extra virgin olive oil. Noir d’Olive has a sweeter bouquet and a mild, rounded flavor with notes reminiscent of black olive tapenade and truffle.

Its AOP designation also connects the oil to the agricultural traditions and defined production practices of its Provençal origin.

What is Noir d’Olive olive oil best used for?

Noir d’Olive is especially well suited to dishes where its mellow black-olive and savory notes can stand out. Serve it at room temperature rather than treating it simply as a cooking oil.
