Frequently Asked Questions
What is balsamic vinegar made from?
Balsamic vinegar is made from grape must—the juice obtained from freshly crushed grapes—either on its own or blended with wine vinegar, depending on the type. In cooked-must-only balsamics, the must is cooked, fermented, and aged. Other styles combine grape must with wine vinegar before further processing and maturation. These different methods help explain why balsamics vary in flavor, texture, and complexity.
What is the difference between IGP and DOP balsamic vinegar?
IGP, or PGI in English, means Protected Geographical Indication. Balsamic Vinegar of Modena IGP combines grape must and wine vinegar and undergoes a minimum of 60 days of maturation in wood. Some versions mature considerably longer.
DOP, or PDO in English, means Protected Designation of Origin. Traditional Balsamic Vinegars of Modena and Reggio Emilia have separate protected designations. Both are made from cooked grape must alone and aged for at least 12 years, with Extravecchio versions aged for at least 25 years. Their production also follows specific rules for geographical origin, processing, and quality assessment.
How can balsamic be made with only one ingredient?
Cooked grape must can undergo alcoholic and acetic fermentation, developing its vinegar character without the addition of separately made wine vinegar. This is the basis of Traditional Balsamic production.
However, a single-ingredient recipe does not automatically qualify a balsamic as Traditional Balsamic DOP. That protected designation also requires compliance with rules governing origin, production, aging, and testing.
