These Cantabrian anchovies are known for their rich, buttery texture and deep, savory flavor. Carefully prepared using traditional methods, they offer a balanced salinity and a smooth, tender bite.
Fishwife’s anchovies are hand-packed by a third-generation, family-owned cannery on Spain’s Cantabrian coast. The fish are sourced from Europe’s first MSC-certified sustainable anchovy fishery and caught in the Cantabrian Sea using the purse seine method. After harvest, the anchovies are semi-preserved through a slow salt-curing process that lasts six to twelve months, allowing their flavor to fully develop. They are then packed in premium Spanish extra virgin olive oil sourced directly from farmers in northern Spain.
Serve simply with good bread and butter, melt them into tomato-based pasta sauces for depth, or incorporate them into a classic Caesar salad. A traditional pantry ingredient with remarkable flavor and versatility.
