Produced by Huilerie J. LeBlanc, a family-run French maker dating to 1878, this exceptional Champagne Vinegar is crafted from Pinot Gris and Meunière grapes grown in France’s Champagne region.
The vinegar is left unfiltered, retaining a small amount of the “mother,” then aged in small oak barrels. The result is beautifully balanced—mild and smooth with a clean, crisp acidity that enhances food without overwhelming it.
This is the kind of vinegar that can transform a simple vinaigrette. Whisk it with a great extra virgin olive oil, walnut or hazelnut oil for leafy greens and vegetable salads. Its delicate acidity is also particularly well suited to seafood, poultry and asparagus, or use it to make a classic mignonette for oysters and shellfish.
Keep it near the stove, too. A splash is excellent for deglazing a pan, brightening sauces or finishing cooked vegetableswhen they need just a touch of acidity.
