Balsamic Vinegar of Modena is a dark Italian vinegar known for its balance of sweetness and acidity. The protected product, Aceto Balsamico di Modena, is made from grape must—the juice obtained from grapes—and wine vinegar, then matured in wooden containers. Its flavor can range from bright and tangy to rich and mellow.

What is the difference between PGI and traditional PDO balsamic?

Balsamic Vinegar of Modena PGI, also labeled IGP in Italian, combines grape must with wine vinegar. Its required blending, processing, maturation, and aging take place in the provinces of Modena or Reggio Emilia. Bottling may take place elsewhere. Traditional Balsamic Vinegar of Modena PDO, also labeled DOP, is made exclusively from cooked grape must, without added wine vinegar or caramel coloring. The grapes must come from Modena, and production, aging, and bottling must take place within the province. PGI means Protected Geographical Indication; PDO means Protected Designation of Origin.
