Rougie Duck Rillettes

A traditional French pate comprised of duck meat and fat, this duck rillette has a decadent, hearty flavor and a thick, spreadable texture. Cooked similar to a confit, it is made by slow cooking duck meat in its own fat or up to 10 hours until the meat is finely shredded, packaged, and topped with duck fat. Flavorful as is, this duck rillette can also be sprinkled with gourmet sea salt flakes or mixed with orange zest and rosemary for a fragrant, bright kick.
